
Our Story
Wing Lee-Chan is the founder of Spirited Fusion — a premium alcohol-free cocktail brand inspired by Asian flavours and built with a chef’s approach to balance and structure.

Born in London to parents from Hong Kong, Wing grew up surrounded by food. Her earliest memories are of helping in her family’s fish and chip shop, where she learned that hospitality is ultimately about bringing people together.
After a successful career in finance, Wing made the bold decision to retrain as a chef, studying at Leith’s School of Food and Wine and working in some of London’s most respected kitchens, including The Fat Duck and Dinner by Heston, and 64 Goodge Street. In 2024 she founded Timmy’s Fusion, an Asian-inspired catering and private dining company named in honour of her late father.

Spirited Fusion grew naturally from this journey. Through supper clubs and events, Wing noticed that many guests wanted a drink that felt as thoughtful and complex as the food — something celebratory, layered and grown-up, but without alcohol.

Each Spirited Fusion drink is designed like a dish: balancing aromatics, acidity, texture and finish to create depth and character. Inspired by flavours from across Asia — from yuzu and cherry blossom to pandan and Gochujang — the result is a new kind of alcohol-free cocktail experience.
