Wing Lee-Chan is the founder of Spirited Fusion — a premium alcohol-free cocktail brand inspired by the bold flavours of Asia and built with a chef's approach to balance, structure and flavour.
Born in London to parents from Hong Kong, Wing trained as a chef after a career in finance, honing her craft in Michelin-starred kitchens. In 2024, she founded Timmy's Fusion, an Asian-inspired catering company named in honour of her late father. It was through her supper clubs and private dining events that the idea for Spirited Fusion was born. Time and again, guests wanted an alcohol-free drink that deserved a place alongside the food on their plate — something distinctive, celebratory and exciting to drink.
Every Spirited Fusion recipe is built like a dish rather than mixed like a cocktail. Aromatics, acidity, texture and finish are carefully composed with the same precision a chef brings to a plate of food, creating drinks that unfold with every sip. Each one reveals itself gradually, developing through the palate before finishing with purpose.
The recipes draw on distinctive ingredients from across Asia — from pandan's warm, grassy sweetness and yuzu's vibrant citrus brightness to the gentle, lingering warmth of gochujang.
